Ingredients for making baba girl cake:

For the cake:

 1½ cups of wheat flour (210 grams)

 0.66 cup of sugar

 ½ cup of whole milk

 5 eggs

 1 tablespoon of vanilla essence

 1 teaspoon of baking powder

For the girl's baba filling:

 1 can of condensed milk

 200 milliliters of coconut milk

 3 egg yolks

For marshmallow and coconut topping:

 1 cup of sugar (160 grams)

 ½ cup of water (120 milliliters)

 3 egg whites

 grated fresh coconut

How to make baba cake:

Prepare the cake by separating the whites from the yolks and beating the whites in a snow point, as in the photo. In another bowl beat the egg yolks and sugar until light and fluffy.

Add the vanilla and milk to the cream and sugar and mix. Add the sifted flour little by little, stirring between each addition, so that no lumps form and the dough does not become heavy.

Tip: You can blend these ingredients by hand or with an electric mixer, for faster preparation.

Finally, add the egg whites beaten into the dough by hand, also little by little and in delicate movements, so that they do not lose air and the cake is grown and fluffy.

Finally, add the yeast, mix a little and place the dough in a round mold, without a central hole, greased and floured. Bake in a preheated oven at 180ÂșC for 30 minutes or until golden.

To prevent the cake from wilting, do not open the oven before the cake is baked for 20-30 minutes.

Tip: In this case, we recommend using a 24-cm cake tin.

While the cake bakes, prepare the baba de Menina filling: place the condensed milk, coconut milk and egg yolks on the fire. Stir for 10 minutes or until it comes off the bottom of the pan, in a soft brigadeiro point. Turn off and let cool.

Tip: Sift the yolks to avoid the egg smell and taste of this stuffed cake. Use free-range egg yolks to get a very yellowish cream.

Also prepare the marshmallow topping: in another pan place the sugar and water and bring to a boil over medium heat to low until the sugar melts and turns into a thin syrup. Disconnect.

Beat the whites to a snow point and, while beating, add the sugar syrup in a thin thread. Continue beating until it becomes a creamy, shiny mixture.

Tip: This marshmallow mixture is also called Italian meringue.

When the cake is done, remove it from the oven and let it cool before unmolding. Then cut in half, fill with the baba baba and reassemble. Cover the entire cake with the marshmallow, sprinkle the grated coconut and you're done!
